I feel a bit better today over how I felt yesterday, but my weight has gone up fairly significantly. Or perhaps it's down from what my actual weight was yesterday. I don't know. I didn't weight myself yesterday. So I'm working with the weight from the day before last, and I was at my lowest at that point. I hold out hope that my weight will drop from here now that I'm back to fasting again. I'm not a new 120-hour fast. It's still a net loss for the month, so I'm winning.
Starting weight: 415 lbs
Current weight: 339.2 lbs ⇧
Long-term Goal: 145 lbs
Short-term Goal: 325 lbs
The meal I shared with my husband was low-carb meatballs with marinara and mozzarella. To go with it, I made a fairly simply salad with a keto-friendly Italian dressing that I made and a dusting of Parmesan cheese. We also found some keto-friendly cheese crisps to use as croutons, too. The meal was very good.
I used a half-a-pound of ground beef to make 10 meat balls. I had four, and I gave six to my husband. I split a total of two cups of marinara sauce, four ounces of sliced baby Bella mushrooms, and eight ounces of Mozzarella cheese in similar fashion. It was like having pizza without the crust or pasta spaghetti and meatballs without the pasta. Personally, I don't miss pasta or bread. My husband would love to have something witch which we can sop up sauces, though.
The dressing for the salad had extra virgin olive oil, red wine vinegar, minced garlic, oregano, salt, pepper, and a hint of yellow mustard. I think it could have used a little more salt, maybe, but it was pretty good and really well received. I had meant to add some black olives to my salad, but I forgot. It was excellent as a least meal before my fast.
I fell asleep a bit early. As a result, I was able to get up a bit early and have time to play a little Sims 4 on my XBox One before getting ready for work. That was quite relaxing. Typically, we wake up with just about a half an hour to get ready, and then we are under a lot of stress and pressure to do everything we need to do and leave on time. It felt a bit leisurely today. I liked that.
Having less stress and pressure before going to work is great graph:
