2018 MAY 6 -- Day 25

Yay! The climb up has stopped, and I'm coming back down the mountain. I am loathe to breathe easy and let myself think it will continue downward because I don't want to jinx it. I'm at 367.4 lbs today. I'm looking to be back at 366 lbs at some point soon, and then I can start to breathe easier. I was very worried for a good minute, but the worry has given way to hope. I am hopeful that I will see 366 lbs again soon.

Today I was really very tired, so I didn't make another casserole. This is partly because I was tired, but also partly because I have only one 13 x 9 pan, and I had used it to make the Bacon Cheeseburger Casserole the other day. So I served up two portions for the hubs, and one portion for me, then I put the rest into zippies for the freezer. I may eat that next week and forego shopping. We are getting overrun with leftovers because I haven't learned yet how much we eat now that I'm doing Keto and OMAD (one meal a day). We are clearly consuming much less than we were.

I think we may not need to go shopping this coming Friday. That would give us a nice rest. I need to go over what we actually consume and rethink my shopping list. This makes me happy. We can start saving some serious money with as little as I am eating now. And the even better news is that my husband told me that he will eat whatever I put in front of him, so if I want to give him Keto food, he will eat it. I don't want to change his routine much, so I have been looking into making homemade mayonnaise and Keto-friendly bread recipes so I can continue to give him two sandwiches for lunch and then feed him some of my casserole dishes for dinner. He'll never know the difference, right?

I found this Keto bread recipe that i may try:

Ingredients
1/2 cup Coconut flour
1 stick butter (8 tbsp)
6 large eggs
1  tsp Baking powder
2 tsp Dried Rosemary
1/2-1 tsp garlic powder
1/2 tsp Onion powder
1/4 tsp salt

Instructions

  1. Combine dry ingredients (coconut flour, baking powder, onion, garlic, rosemary and salt) in a bowl and set aside.
  2. Add 6 eggs to a separate bowl and beat with a hand mixer until you get see bubbles at the top.
  3. Melt the stick of butter in the microwave and slowly add it to the eggs as you beat with the hand mixer.
  4. Once wet and dry ingredients are fully combined in separate bowls, slowly add the dry ingredients to the wet ingredients as you mix with the hand mixture.
  5. Grease an 8x4 loaf pan and pour the mixture into it evenly.
  6. Bake at 350 for 40-50 minutes (time will vary depending on your oven).
  7. Let it rest for 10 minutes before removing from the pan. Slice up and enjoy with butter or toasted!
This recipe yields 10 slices, and per slice, this is the nutritional value:

Calories: 147
Fat: 12.5g
Protein: 4.6g
Carbs: 3.5g
Fiber: 2g
Net Carbs: 1.5g

So for 4 slices -- which is how much my man would eat -- that's only 6 net carbs. Not bad. 

I already have most of these ingredients. Experimenting will be fun!

I don't have much to say today. I thought I had beaten the plateau, but it is still going strong. I'm the same weight today as I was yesterday. This is not fun, but now I sound like a bit of a broken record. I'm not going to say much today, so I'll share a recipe. 2018 JUN 15 -- Day 65

The weight is coming down. I'm down by 1.4 lbs today from where I was yesterday. It still doesn't make up for the 9 lbs in total that I gained from just one weekend of eating, but it is going to take some time to get that back off. I really want it to come off as quickly as it came on, but we all know that will probably not happen. If I want something, that's the surest way to make sure it doesn't happen! But it appears to have worked for these YouTubers, so who am I to judge or criticize what they have chosen to do? 2017 AUG 30 -- Day 11

I weighed myself before work again tonight. I like these lower numbers. I'm pretty sure this is due to not eating during sleep for at least 6 hours. Whatever the case, I'll take it! Yay! Low number! I've been feeling the hungry growly monster in my tummy, but I've been ignoring him... until now. I'm eating my sandwich. According to the book, you are only supposed to feel hungry when you're body is below its set-point. Is my set point higher than 406.4 lbs? Wow! I need to find out how to lower that a lot faster. How can I make it 145 lbs? LOL. I know the answer to this. It gradually becomes lower over time; I must be patient. The trend is still downward on the whole, but right now it is still well above the first measurement I took at 404.8 the day I got my scale. It's going down, and I saw 406.4 lbs today ...
