I made the pizza casserole finally! It was very delicious. The holdup was in getting the gumption to mix up the Italian sausage. I made Italian sausage using ground beef and Italian seasonings, then I had to let it sit in the fridge for at least 24 hours to allow all the flavors to blend. It was worth it.
This pizza casserole, and it's hard to imagine that it helps you lose weight and is healthy, consists of a bottom layer of ground sausage, then a layer of sauteed mushrooms (I used baby bellos), and then a low-carb sauce on top of that. Then you spread some grated mozzarella over the top and place pepperonis on it. Wow! That was yum!
The pan was four servings in total. I had one. My husband ate two. They were huge servings. I put this in a 13 x 9 pan, and that means a serving was 1/4 of the pan! I put that on top of a bowl full of greens, and I topped it with some sour cream and nutritional yeast. That was my one meal, and it was totally worth the effort. I need to make that again!

What's even better than the delicious pizza casserole is the fact that I'm at my lightest weight of 366.8 lbs today! Yay! I haven't been lighter than this yet. Maybe tomorrow? I don't know. I think I'm actually on a plateau at the moment, so I fully expect it to go up again. Maybe my scale doesn't know any lower weights? LOL Yes. It is my scale's fault. My scale never learned what's lower than 366.8 lbs. It's confused!
There is a lot of food in the house, and usually, we do grocery shopping on Friday, but I don't think we will need to. There is far too much food, and I don't think we can eat it all. I seriously need to readjust the grocery list because I bought enough this week to make three casseroles, and in total, that make 20 servings of food. Even with my husband eating double servings, that's far too much.
It's also mine and my husband's 3rd anniversary today! This was a delicious anniversary meal, and my husband loved it. He had two helpings of the pizza casserole! I have one left that I'm saving for tomorrow. I can't wait. It was so good!
