As expected, I am only down by .4 lbs today. I overate a bit yesterday, and I ended the day with a total calorie count of 1,546. I made the Shrimp Paella I was planning, and I had a bit of it with my husband even though I wasn't really hungry. At that point I had already consumed my self-imposed daily calorie limit of 1,200 calories, so that brought me up to over 1,500 calories. Unwise.
My husband loved the paella. I didn't. So it wasn't even worth it. I used white wine in the recipe, and I should've known I wouldn't like it. I don't like recipes that use wine. The other recipe I plan to make, the one for the beef Stroganoff, also calls for white wine. I will go ahead and make it, but I'm fairly certain I won't like it. I'll give it a chance, though, like I did with the paella. It's very likely that the ingredients make make a world of difference, and I could enjoy the Stroganoff.

It's an up-blip, but it isn't a huge setback. It was my weekend, and I'll be going back to work tonight. The evil pizza monster didn't get me, but I did have a bit of a mini-binge as you can see from my food diary from yesterday. I just hope that it doesn't send me even higher up the scale.
I have an Instant Pot pressure cooker, so this is the recipe I used:
Instant Pot Pressure Cooker Shrimp Paella
1 lb jumbo shrimp, shell and tail on, frozen
1 cup Jasmine rice
4 Tbsp butter
1 onion, chopped
4 cloves garlic, chopped
1 red pepper, chopped
1 cup chicken broth
1/2 cup white wine
1 tsp paprika
1 tsp turmeric
1/2 tsp salt
1/4 tsp black pepper
1 pinch saffron threads
1/4 tsp red pepper flakes
1/4 cup cilantro (optional)

My husband is down from 236 lbs yesterday to 235.2 lbs today. That's great. I hope I don't slip on my diet while watching his. That is a danger. I tend to start neglecting myself when I take care of others. I will need to remain vigilant. I'm happy he's doing so well. That means that he will likely continue to stick to the diet. We just bought two huge 50-oz bottles of ELOO (I normally buy one as it lasts me 25 days). We are on the same dose, so these two bottles should cover us for the next 25 days.
He takes all 4 Tbsp at once after we get home from work. (I still don't know how he can do that much all at once. He must have an iron constitution.) I take mine in two doses of 2 Tbsp each; one before work, and one after work when he takes his. He chose to do his all at once because 2 flavor-free hours a day is much easier than 4. I don't really notice the time as I wouldn't normally be eating or drinking anything other than water during those hours anyhow. He can't drink water alone, though. He needs some flavor in it.

- Set Instant Pot to Saute function. Add butter to pot and melt. Add onions and cook until softened. Add garlic and cook for about a minute more.
- Add paprika, turmeric, salt, black pepper, red pepper flakes, and saffron threads. Stir and cook for about 1 minute. Add red peppers.
- Add rice and stir. Cook for about 30 seconds to 1 minute. Add chicken broth and white wine, making sure all rice is covered.
- Add shrimp on top. Turn off Instant Pot and cover. Make sure valve is set to sealing.
- Set Instant Pot to Manual Mode and set a 5 minute timer. When done, quick release.
- Remove shrimp from pot and peel if desired. Serve with Cilantro.
