Yesterday seems to have been just an anomly or a blip or something. I just weighed-in, and I'm back down to 404.8 lbs. Bodies are weird.
This is my weekend, so I didn't work last night. I was pretty good at remembering to take the 2 Tbsp of ELOO, but I did it around 7:20 PM which is about 30 minutes later than usual. I don't think it'll matter much.
Starting weight: 415 lbs
Current weight: 404.8 lbs ⇩
Long-term Goal: 145 lbs
Short-term Goal: 399 lbs
When I had breakfast/dinner yesterday, I felt the bloating that others have described, and I felt over-full when barely halfway through my meal. I had to give the rest to my husband. I had nearly all of my chicken left, and was happy to take it off my hands, but I hope my diet doesn't start fattening him up!
It's 6:25 AM. I don't feel like making dinner as I'm not hungry, but that's also probably because instead of the sack lunch at work, we ate a meatloaf dinner I made. Calorie-wise it should have been about the same, but I got hungry and also ate 3 pieces of cold pizza while cooking. My husband ordered pizza while I was at work as his weekend starts a day before mine, and he doesn't like to cook for himself.
And still! I'm at 404.8 lbs today. Maybe I can keep a general downward trend. It's the same as the day before yesterday, but it's down from yesterday's 406.6 lbs. I sure hope it goes lower soon.
Meatloaf
1 lb ground chuck
1 lb ground turkey
2 rolls Ritz crackers, crushed
4 eggs
3/4 c BBQ sauce (I used Sweet Baby Ray's original)
1/2 c BBQ sauce (to top the meatloaf)
4 tbsp Worcestershire sauce
4 tsp pepper (I like a lot of pepper)
2 tsp salt
2 tsp ground sage
4 tbsp garlic powder
1/2 c diced white onion
1/2 c diced green bell pepper
Pre-heat the oven to 350°f. In a large bowl, mix all but the 1/2 c BBQ sauce.
Use a loaf pan, or, if you're like me and don't have one because your apartment is 500 sq ft and your kitchen is ghetto as hell, shape it into roughly-loaf-shaped on a foil-lined baking sheet.
Shove the thing into the oven, and let it bake for 30 minutes.
Carefully get the monstrosity out of the oven. Raise the oven temp to 400°f. Top the meatloaf with the remaining BBQ sauce. And bake that bad boy another 20 minutes.
Be sure the temperature of the meat reaches 165°f or more for safety. And then serve it! I served this with broccoli and macaroni & cheese.
This will feed about 8 people. It's about 2 nights of dinner for a family of 4; for me and the hubby, we'll be eating this for 4 days.
